<p><strong>Peanut Butter &amp; Jelly Sushi Rolls</strong></p>
<p><strong>Ingredients:</strong></p>
<p>2 slices of bread (you can also try raisin bread)<br />
2 tsp peanut butter (or try sunflower butter for those with allergies)<br />
2 tsp jelly (any flavor works, but you know grape is the best!)</p>
<p><strong>Directions:</strong></p>
<p>1. Remove the bread crust, and flatten the bread with your hand or a rolling pin if the bread is very thick.</p>
<p>2. Spread peanut butter and jelly on each slice of bread.</p>
<p>3. Roll into a tight spiral and cut into 2 inch pieces.</p>
<p>4. Find other fresh ingredients to mimic a sushi plate, like carrot strips, fresh fruit and other garnishes.</p>

<div>This is a versatile high protein lunch  that still tastes great at room temperature, kids can have fun  assembling various possibilities themselves at lunch, and is not terribly  messy.  Plus, with very little prep at the beginning of the week, this lunch is a breeze to pack each morning.</div>

Wedge of yummy cheese (varies: cheddar, Jarlsberg, brie, etc)<br />

<td colspan="2">Kids can have fun deciding how to  assemble this lunch each day.  Do they want to  put the peanut butter, the cheese, or the egg on the bagel?  Do they  want to eat everything separately or all together?</p>
<p>At any rate, the egg, cheese and peanut butter all together provide a  very high level of protein (compared to most lunch  items), and the whole grain bagel provides needed fiber.  This lunch has enough variety to satisfy most kids, and  gives them the energy to stay focused and alert through the afternoon.</p>
<p>Best of all &#8211; it&#8217;s so easy to prepare this the night before.  I boil a  few eggs for use during the week, pre-slice a few bagels and bag them in  snack sized zipper bags, a prepare a few small plastic containers of  peanut-butter or cream cheese and cheese wedges to keep in the fridge  for the week.  I always pack some plastic utensils with this lunch. Then, it takes only a minute to pack everything  in a lunch bag each morning.   I pack this lunch for my kid two or three days a week and it is  always a big hit.   Be sure to provide plenty of liquid with this lunch.</td>
