Lunch Recipe Contest Winner: Fried Apple Pie Snackers
We had many entries in our first ever recipe contest. Many of them healthy, all of them yummy, but the winning entry was chosen because it really warmed us up after a week of torrential rain here in the Northeast.
This great recipe came from Leslie of Blasdell New York, who says “What’s a better lunch dessert than good classic apple pie, but not a big pie, little snackers for your little daughter or son.”
Ingredients:
1 apple
2 T sugar
10g butter
1 t. vegetable oil
1 t. lemon juice
2 T raisins
16 potsticker wrappers
Frying oil to taste
sugar to taste
(serves 4)
Instructions:
1. Cut the apples into eight vertical slices and peel half of them. Slice horizontally into 2-inch pieces and cover with lemon juice.
2. Heat vegetable oil and butter in a frying pan over medium heat, melting the butter.
Add the apple and turn down the heat to low, adding the raisins and sugar once the apple is warm. Reduce heat and saute until soft, then let cool.
3. Place 1 T of the filling from step 2 into the center of a potsticker wrapper. Put water along the edge of the wrapper, then top with another wrapper to cover the filling.
4. Put the frying oil in a frying oil in a frying pan and heat to 350 degrees.
Add the apple pies from step 3 to the frying pan and fry until golden brown. Then sprinkle with sugar.
5. Now give to your child and see them eat it up.
