Peanut Butter & Jelly Sushi Rolls
Ingredients:
2 slices of bread (you can also try raisin bread)
2 tsp peanut butter (or try sunflower butter for those with allergies)
2 tsp jelly (any flavor works, but you know grape is the best!)
Directions:
1. Remove the bread crust, and flatten the bread with your hand or a rolling pin if the bread is very thick.
2. Spread peanut butter and jelly on each slice of bread.
3. Roll into a tight spiral and cut into 2 inch pieces.
4. Find other fresh ingredients to mimic a sushi plate, like carrot strips, fresh fruit and other garnishes.

We loved this idea because it gives the kids the ability to put together their own combination of healthy and yummy foods. You could even encourage them to have fun with it by making a face on their bagel with grapes and cheese. M Kennedy won a set of Laptop lunch containers and utensils.

This is a versatile high protein lunch that still tastes great at room temperature, kids can have fun assembling various possibilities themselves at lunch, and is not terribly messy. Plus, with very little prep at the beginning of the week, this lunch is a breeze to pack each morning.

Whole hard boiled egg
7 grain or whole wheat mini-bagel, sliced Wedge of yummy cheese (varies: cheddar, Jarlsberg, brie, etc) A few tablespoons of peanut butter or cream cheese Grapes or carrot sticks or apple slices Water or low sugar juice box |

| Kids can have fun deciding how to assemble this lunch each day. Do they want to put the peanut butter, the cheese, or the egg on the bagel? Do they want to eat everything separately or all together?
At any rate, the egg, cheese and peanut butter all together provide a very high level of protein (compared to most lunch items), and the whole grain bagel provides needed fiber. This lunch has enough variety to satisfy most kids, and gives them the energy to stay focused and alert through the afternoon. Best of all – it’s so easy to prepare this the night before. I boil a few eggs for use during the week, pre-slice a few bagels and bag them in snack sized zipper bags, a prepare a few small plastic containers of peanut-butter or cream cheese and cheese wedges to keep in the fridge for the week. I always pack some plastic utensils with this lunch. Then, it takes only a minute to pack everything in a lunch bag each morning. I pack this lunch for my kid two or three days a week and it is always a big hit. Be sure to provide plenty of liquid with this lunch. |

We had many entries in our first ever recipe contest. Many of them healthy, all of them yummy, but the winning entry was chosen because it really warmed us up after a week of torrential rain here in the Northeast.
This great recipe came from Leslie of Blasdell New York, who says “What’s a better lunch dessert than good classic apple pie, but not a big pie, little snackers for your little daughter or son.”
Ingredients:
1 apple
2 T sugar
10g butter
1 t. vegetable oil
1 t. lemon juice
2 T raisins
16 potsticker wrappers
Frying oil to taste
sugar to taste
(serves 4)
Instructions:
1. Cut the apples into eight vertical slices and peel half of them. Slice horizontally into 2-inch pieces and cover with lemon juice.
2. Heat vegetable oil and butter in a frying pan over medium heat, melting the butter.
Add the apple and turn down the heat to low, adding the raisins and sugar once the apple is warm. Reduce heat and saute until soft, then let cool.
3. Place 1 T of the filling from step 2 into the center of a potsticker wrapper. Put water along the edge of the wrapper, then top with another wrapper to cover the filling.
4. Put the frying oil in a frying oil in a frying pan and heat to 350 degrees.
Add the apple pies from step 3 to the frying pan and fry until golden brown. Then sprinkle with sugar.
5. Now give to your child and see them eat it up.
